In the photograph to the right is Steve Nally beside the Kettle, which is made from almost entirely recycled
materials. A heat exchanger has also been fitted to capture waste heat from the Kettle and this heat is used
to boil water to heat the mash.
Invercargill Brewery has a fundamental philosophy of resource efficiency and seeing waste as a potential
resource. This attitude has helped to minimise costs and reduce their environmental impacts.
The business reuses materials whenever possible and stockpiles items like malt sacks and layer boards until
a use or alternative market is found. Processes have been designed to be energy efficient and capture waste
energy for reuse whenever possible.
Materials such as paper, cardboard, plastic wrap and glass are collected for recycling and waste product is
collected by a pig farmer. The Brewery also help their customers to reduce waste by providing beer on tap so
people can refill their own bottles rather than accumulate more and more glass bottles.
Owner/Brewer Steve Nally says that resource efficiency just makes good business sense. He is always looking
at ways to be more efficient because he hates to see potential resources going down the drain.
